Pan Fried Chindian Sea Bass



  • TIME:

    30-40 Minutes


  • 5-6 sea bass fillets (boned), cut into pieces or kept whole
  • 6 tbsp vegetable oil

Sea Bass Marination

  • 3 tbsp soy sauce
  • 2 tbsp sesame oil
  • 2 tbsp coriander, finely chopped
  • 1½ tbsp ginger/garlic paste
  • 1 tbsp white vinegar
  • 1 tbsp garam masala
  • 1 tbsp green chilli paste
  • ½ tsp salt

Flour coating

  • 75g plain flour
  • ¼ tsp salt
  • ¼ tsp coarse black pepper


  • To make the marination, mix all the marination ingredients in a mixing bowl and leave to one side
  • Season the flour with the salt and pepper and put into a flat plate
  • Heat a frying pan with the oil, when the oil is hot, dip a piece of fish into the marinade to cover both sides generously, then dip into the flour mixture on both sides and pan fry
  • Fry one side on a medium heat for 2 minutes before carefully turning the piece over using a fish slice
  • Fry on the other side for 2 minutes and continue cooking both sides until the fish is crispy and golden brown on both sides, continue this process for the remaining fish pieces
  • Serve
