Gajar Ka Halwa

Ingredients

  • 800g carrots (washed, peeled and grated)
  • 245g ghee
  • 200g white sugar
  • 220ml milk
  • 50g milk powder
  • 20g crushed almonds
  • 20g crushed pistachios, shells removed

Spices

  • 1ΒΌ tsp green cardamon powder

Method

  • In a saucepan, cook the grated carrots on a relatively high heat with the milk, spooning continuously for about 25 minutes. You will see the carrots will start to sweat and the texture will start to become mushy. If they begin to stick to the saucepan, add a little more milk
  • Add the sugar to the saucepan and cook for a further five minutes until the milk has been evaporated
  • Add the ghee to the saucepan and cook for another five minutes
  • Add the milk powder to the saucepan and cook for a final minute
  • Remove from the heat, mould the halwa into a round bowl, pressing down with a spoon and tip the bowl into a plate. This will shape the halwa
  • Sprinkle the top of the halwa with crushed pistachios and almonds to garnish
  • Serve
